A CHEERFUL AND CURIOUS YOUNG CHEF

 

He has been the head of the hotel's kitchens since 2011. Trained alongside Alain Solivérès and Philippe Etchebest, his background has given him solid technical expertise to express the tastes and flavours of contemporary cuisine. To honour the original ingredients, his menu celebrates regional and seasonal produce. He knows how to enliven flavours, while remaining unpretentious. His recipes are tasty and each dish is a hymn to the produce.
 

LOCAL PRODUCE BROUGHT TO LIFE ON THE PLATE

Eric Prowalski likes to discover local and typical produce to then have diners experience them too. He has special relationships with his suppliers: Bernard Curt, a fisherman on Lake Annecy; Claude Bocquet, a butcher in Annecy; Pierre Gay, a master refiner and "Meilleur Ouvrier de France 2011" (craftsmen competition in France); Jean Robert Martel, vegetable producer in Vieugy; Didier Bunaz, arborist in Cruseilles...

20/VINS - A THEMED RESTAURANT WITH AN INNOVATIVE CONCEPT

This wine bar in the heart of the historical town centre welcomes you to a warm and elegant setting at a stone's throw from Lake Annecy. Come and discover the wines' aromas alongside refined Mediterranean cuisine, renewed from season to season. The concept of 20/Vins is for you to serve yourself and taste from over 48 wines, categorised for you to taste their aromatic strength from the simplest to the most complex, as well as wines from small producers through to classified "grands crus".
